Recipe: Back to School Baked Oatmeal Parfait

  • 1 Egg
  • 3 Tablespoon Oatmeal
  • 1 Tablespoon Flaxseed (ground)
  • 1 Tablespoon Honey
  • 1/2 Teaspoon Corn Oil
  • 1/4 Teaspoon Baking Powder
  • 1 Teaspoon Pumpkin Spice or 1 Teaspoon of Almond Flavoring
  • 1/4 Cup of Greek Plain Yogurt


  1. In large measuring cup, whip egg and oil together
  2. Add oatmeal, ground flaxseed, honey, baking powder, spice or flavoring and greek yogurt
  3. Mix well
  4. Pour into microwave safe mug and microwave for 3 minutes
  5. Top with greek yogurt, sliced strawberries, blueberries and sliced almonds.
