Cooking Up a Storm: Jalapeno Poppers

Folks from the Trenholm Culinary School stopped by to show us how to make some great gameday treats!

Jalapeno Poppers

Serves 10

  • 10 fresh jalapenos
  • 2 large chicken breasts
  • 10 bacon strips (cut in half)
  • 1 medium yellow onion
  • salt and pepper (to taste)
  • 20 toothpicks
  1. Cut off stem end of pepper and then cut in half lengthwise.
  2. Clean out all of the seeds and the white vein in the peppers.
  3. Cut chicken breasts into small pieces, about 2 inches long and 1 inch wide. Season with salt and pepper.
  4. Slice onion into small strips.
  5. Place a piece of chicken in the pepper half and cover with onion slice, wrap with bacon and fix with toothpick.
  6. Place on a greased baking sheet and back at 350 degrees for approximately 45 minutes or until chicken and bacon are done.
