Taste of the South: Sweet Potato Poundcake

The Thanksgiving season brings with it lots of great eats and treats.  Jeff Sanders decided to head into the kitchen to learn how to cook up some great southern Thanksgiving dishes.  This week Jeff is satisfying his sweet tooth.  He’s baking up a sweet potato poundcake with the good folks at the Must Stop Cafe in Wetumpka.

Here’s the recipe:


1 cup butter (softened)
2 cups sugar
2 cups cooked and mashed sweet potatoes
1 tsp vanilla extract
4 eggs
3 cups all purpose flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp salt
Beat eggs well, and sugar, butter (mixing well in between), add vanilla. Sift together all dry ingredients. Add, rotating one cup dry mixture, sweet potato, one cup at a time. Pour into greased and flour bundt pan.  Bake on 350 for 1 hour or until toothpick comes out clean.  Remove from pan, let cool, then add your favorite glaze or icing.
